It's a match made in muffin heaven!

These low-sugar, fruity and hearty muffins are great for breakfast or for an easy-to-pack snack on the go.


🥛 Ingredients:


🥣 100g plain flour

🥣 60g whole-wheat or brown flour

🥣 40g quick-cooking oats

🥣 1 tablespoon baking powder

🥣 ½ teaspoon baking soda

🥣 2 tablespoons sugar (optional)

🥣 2 large eggs

🥣 120ml vegetable oil

🥣 200g plain or Greek yoghurt

🥣 60ml milk

🥣 200g blueberries

🥣 70g dried figs and/or dried dates (about 3 figs and 1-2 dates)


📖 Method:


Step 1: Preheat oven to gas mark 4.

Step 2: Combine the dry ingredients in a bowl (flours, oats, baking powder, baking soda, and sugar if using). Mix with a fork or whisk.

Step 3: Combine the wet ingredients in a separate bowl, beating the eggs first with a whisk or fork and then adding the oil, yoghurt and milk.

Step 4: Chop the dried figs and/or dried dates into small pieces.

Step 5: Combine the dry and wet ingredients and mix with a large spoon until just combined. You may need to add a few more tablespoons of milk to loosen the mixture. This normally depends on what combination of flour is used and how thick the yoghurt was.

Step 6: Add the blueberries and dried fruit, and stir with a spoon until just combined.

Step 7: Spoon the mixture into a muffin pan for 12 muffins. You can use paper (or silicon) muffin cups, or grease the muffin pan with butter or non-stick cooking spray.

Step 8: Bake for 18-20 minutes or until the tops have browned and a skewer pushed into the centre of a muffin comes out clean.


 ✍️ Notes: 


  • You can use different combinations of flour, including using almond flour. Just ensure that the total amount of flour (and oats if using) adds up to 200g.
  • The figs are a good substitution for sugar, as the seeds tend to spread out in the mixture and sweeten it. However, if you do not have figs or dates, you can skip these and add more berries.
  • The sugar is optional and can also be substituted for honey or maple syrup. For a sweeter muffin, you can also increase the sugar to up to 100g.
  • I find these muffins work best with blueberry, but other fruits can be substituted, including raspberry or chopped mango.
